Homemade Ice Cream Cookie Sandwiches

I was craving these yummy treats all summer and just finally got around to making them! They are not too hard to make, I only wish I had made a double batch!!  They are going to be gone way too soon!

They are just the right size - you won't feel TOO guilty. Remove from the freezer just a couple minutes before you take a bite - the cookie will be soft and chewy.  Mmmmm - Terrific!

Cookies

2 sticks butter
½ cup sugar
¾ cup brown sugar
1 egg
1 T. water
1 teaspoon vanilla
1 Cup flour (I use 1/2 wheat and 1/2 white flour)
1 tsp. baking soda
½ t. salt
3 Cups Oats
1 cup chopped walnuts (optional - I don't use)
1 cup Chocolate Chips

Make cookies into even size balls, a bit larger than a traditional chocolate chip cookie.
Bake on stone at 350 degrees for about 14 minutes. (Convection Bake at 325 degree for about 12 minutes).
Once cookies are pulled from oven press them down to flatten out. Remove from Stone and allow to cool completely on a rack.
Put Breyer's Natural Vanilla ice cream between two cookies, wrap in plastic wrap and freeze.
